This Slow Cooker Chicken Pasta is one of my favorite easy crockpot dinners to make for my family when I need something simple, creamy, and filling. Tender chicken slow cooks in a flavorful sauce made with cream of chicken soup, Rotel, garlic, Italian seasoning, sour cream, and plenty of melted cheese before being tossed with pasta. It’s a creamy cheesy chicken pasta that requires very little prep and is perfect for busy weeknights when I don’t want to spend all evening in the kitchen. I love this easy slow cooker chicken pasta recipe because it uses simple ingredients I usually already have on hand, and my whole family can enjoy it. The Rotel adds just the right amount of flavor without making the dish overly spicy, while the sour cream and shredded cheese make the sauce extra creamy. Ingredients

3 boneless, skinless chicken breasts
2 (10-ounce) cans cream of chicken soup
1 (10-ounce) can Rotel (do not drain)
8 ounces shredded cheese (cheddar or mozzarella)
½ cup sour cream
1 teaspoon each paprika

2 teaspoons garlic
1 teaspoon salt 
1 teaspoon Italian seasoning
Dash of black pepper
1 (16-ounce) box pasta of choice, cooked and drained

Instructions

1. Add the chicken breasts to the crockpot. Pour in the cream of chicken soup and the undrained Rotel. Sprinkle in the garlic powder, paprika, salt, black pepper, and Italian seasoning. Stir to make sure the chicken is covered by the sauce.
2. Cover on LOW for 6-7 hours or HIGH for 4-5 hours, until the chicken is cooked through and shreds easily.
3. Remove the chicken from the crockpot, shred it, then return it to the sauce.
4. Stir in the sour cream and shredded cheese until the cheese is melted.
5. Meanwhile, cook the pasta and drain.
6. Add the cooked spaghetti to the crockpot and stir until everything is coated in the sauce.
